  Here' an easy, tasty Spanish recipe, called chupin, I got from some Hispanic friends. It originated in Galicia, north west Spain, and has fish in it. I substitute white butter or lima beans and/or tofu (soy cheese) for the fish.

2-3 boiling potatoes, scrubbed, and cut into slices about 1 cm (1/2 in) thick, right across the tubers;
(Sweet potaoes may be substituted, especially the orange ones, as a source of Vitamin A -they will need peeling).
3 onions, peeled and sliced;
1 red capsicum or sweet pepper, with seeds removed, and sliced;
1 green capsicum or sweet pepper, done the same;
4 tomatoes, sliced;
1 can white (butter or cannelini) beans;
1 cup diced firm tofu (soy cheese);
5 bay leaves.
1-2 tsp. paprika powder (optional);
4 large mushrooms, sliced (optional).
2-3 tablespoons olive oil.
2 cups water.
1 tsp. salt.

Method.
Saute or fry the onions and potatoes, one third the way thru add the capsicums/peppers, stirring once or twice. Then add the water, and other ingreds., and boil till done, about 20 mins. Alternatively, transfer to a casserole dish, and bake in mod. oven about 1/2 hour (note -I haven't tried this, but can't see that it wouldn't work).
The mushrooms and sweet potatoes make it a special dish!
Serves 4 -5.
Serve with green salad (quickie here is celery and carrot sticks), olives, and wholemeal bread!

  Here is my grandmother's recipe that she got from Sister Ellen White. she was a very young child when Sister White taught her how to make this.

SCRIPTURE CAKE

½ cup butter Judges 5:25
1 ½ cup sugar Jer 6:20
Cinnamon, Mace, Cloves 1 Kings 10:10
½ tsp salt Lev 2:13
3 egg yolks Isa 10:14
2 cups flour 1 Kings 4:22
2 tsp baking powder Luke 13:21
½ cup water 1 Sam 20:11
1 tbsp honey Proverbs 24:13
1 cup almonds 1 Sam 30:12
1 cup figs “
1 cup raisins “

Blend together butter, sugar, salt spices and egg yolks. Sift together flour, baking powder and add it to the creamed ingredients. Add honey and fruits. Fold in 3 stiffly beaten egg whites. Bake in Moderate oven.

  VEGETARIAN MEATBALLS - Italian:

1 cup ground pecans
1 cup grated parmesan cheese
2 tsp. celery salt
1/8 ts. baking soda
1 tsp. garlic powder
dash of pepper
5 eggs
1 cup Italian seasoned bread crumbs
2 Tbsp. minced or dried parsley
1/4 tsp. baking powder
1 med. onion, diced
3/4 tsp. oregano
1 tsp. Italian seasoning
3/4 tsp. sage

Mix all dry ingredients together first, then add eggs and mix well. Chill in refrigerater for 2-3 hours or until ready to complete. Roll dough by hand into
1-inch balls. Deep fry meatballs on lowest setting for about 4 or 4-1/2 minutes, a few at a time. You can also pan fry them. Makes about 18-20 meatballs.

They are great with spaghetti sauce. I also put them with a mixture of regular jar of chili sauce and grape jelly, (mixed to taste). It sounds awful, but you have to try it - it's GREAT! Enjoy.

  Black Bean &Corn Ranch Salad

  BLACK BEAN AND CORN RANCH SALAD:

1/2 c. Wish-Bone Ranch-up Classic Dressing
1 can (19-oz) black beans, rinsed and drained
1 can (11-oz) whole kernel or mexi-corn, drained
1 c. quartered grape or cherry tomatoes
1/2 c. chopped red onion
2 Tbsp. chopped fresh cilantro
3/4 c. shredded cheddar cheese
1/2 can black olives, sliced
hot sauce, to taste (optional)

In bowl, combine all ingredients; chill. Garnish with lime wedges. ABSOLUTELY AWESOME!!!
