I love a good Zucchini or Banana Nut Bread. Anyone have one without eggs? I've tried using applesauce to replace the eggs in some recipes and it works pretty good. Have you tried it that way?

I had originally planned on sending this recipe out with Christmas cards this year, but got so busy that I'd forgotten to do so. So here it is!
Zucchini Bread
Ingredients:
1) 3 eggs, 2 cups sugar, 1 cup oil,
2tsp. vanilla
2) 2Cups grated, unpeeled zucchini,
1 (8 1/4 oz.) can of Crushed
Pineapple (drained)
3) Mix 3 cups flour,2tsp baking soda,
1 1/2 tsp cinnamon,1tsp salt,
3/4 tsp. nutmeg,
1/4 tsp. baking powder
(1 cup chopped dates or
raisins, also nuts, are
optional.)
Beat (1) in Large Bowl. Mix (2) and (3) in two, separate, smaller bowls. Add (2) and (3) alternatively [to (1)] in Large Bowl. Turn into 3 aluminum Bread Pans (greased), about 1/2 full. Bake at 350 for 1hr.
